Kaiser Rolls

Video on making the knots from King Arthur
I use my Zojirushi Bread Maker on the dough setting for the mixing,
kneading and first rise.
Ingredients
- 3 cups (360g) King Arthur Unbleached All-Purpose Flour
- 1½ tsp instant yeast
- 1½ tsp sugar
- 1¼ tsp (8g) salt
- 1 large egg beaten
- 2 Tbsp (28g) unsalted butter, melted
- 3/4 cup (170g) lukewarm water
- 1 Tbsp milk (approximately) for top wash
Directions
This recipe is not precise. There is some room for error in the
measurements
- Put all wet ingredients into the bread machine, except for the
top wash
- Mix in a bowl the dry ingredients then pour on top of the wet
ingredients
- Run the bread mixer on dough
When the bread machine is finished
- Preheat oven to 425ºF
- Divide the dough up into 6 balls. I do this by weight
- Shape each ball according to the video from King Arthur
- Let rise covered for an hour
- Brush on the milk for the top wash
- Bake for 15 minutes or until golden brown (from the wash) and
light to the touch
- Cool on rack
